Black Currant Jam Recipe - Hello Summer!

One of the things I love most about this time of year is going to all the Farmers' Markets! With so much fresh local produce it is hard not to be excited and inspired to create something new daily in the kitchen....this week it is all about preserving as much of that Summer goodness as possible. Black Currants are one of my favourite berries so I picked up a basket of them (14 cups worth :() and made this delicious jam from a recipe my Mum has used "forever". Tracy's Chocolate Bark #2

R   Recipe 1lb          Good quality 72% Dark Chocolate (broken into small pieces) 1/2 cup   Roasted Pistachio Nuts (shelled) roughly chopped 1/2 cup   Dried Turkish Apricots roughly chopped 1 tsp       Smoked Sea Salt  Directions Mix together the chopped Pistachios and Apricots in a bowl and put aside Place chocolate in a heat proof glass bowl, or double boiler, over a pot of simmering water. The Moscow Mule is refreshing and tangy cocktail that is great to make for yourself or for a crowd - everyone will love it for sure!
